"Although research gaps exist, particularly on optimal dosing and relative polyol efficacy, research evidence supports using polyol-containing chewing gum as part of normal oral hygiene to prevent dental caries." Apparently, there are gaps in the research into how well chewing gum containing polyols (e.g. xylitol) can reduce tooth decay; that’s what researchers writing in the J Am Dent Assoc (2008 Dec;139(12):1602-1614) said.

It has been proven it just seems that it is not generally known. Studies on children have had phenomenal results.
